cooking with barley

Anyone cook with barley much? If so, what types of foods do you put it in? It was suggested to me to use it with meals in place of rice. It is high in fiber and good for you.

I'm interested in using barley more in my family's meals. I came across a recipe for a barley salad using red peppers, frozen peas and Italian dressing...Anyone have other recipes for barley?

We love barley. You're right, use it in place of rice. But there are a lot of other good things to make with it also. Here is my favorite:

Barley/Black Bean Salad
1 1/4 c chicken broth
3/4 cup barley
2 cups or 1 can black beans ( drained & rinsed)
1 red bell pepper chopped
2/3 c chopped green onion or chives
1/2 c fresh cilantro chopped

Dressing
1/4 c olive oil
1/4 c orange juice
1/4 c apple cider vinegar
1 1/2 tsp cumin powder
1 tsp oregano
1 garlic clove minced
salt & pepper to taste

Cook barley in chicken broth. I have used pearl barley & quick cooking both. It will make about 3 cups either way. Pearl makes a little more. Let the barley cool. Combine with the chopped veggies. Whisk dressing & pour on the salad. Stir to coat. This is delicious by itself, or you can eat it with tortilla chips. We use it to top burritos & taco salads also. It is addictive! Very filling.

I made this the other day, it was delicious! Thanks for the recipe. Very filling and yummy. I added some diced avocado to the mix, mmm.

Barley pilaf- take any rice pilaf recipe and substitute barley. Also works with buckwheat!
