I've been lurking for awhile while I am trying to make changes to our diets to be more traditional. When I read about bread, it seems that sourdough is the gold standard. YUCK. I have been making bread soaking most of the flour overnight and then giving it a slower rise time, but every time I see something about sourdough, I think, "do I HAVE to go there?" Is soaking that much inferior?
I am considering ways to make some sprouted flour, but since I don't have a mill, I'm still trying to figure out if I will use my blender, get a coffee mill or what. (I can't get a grain mill just now, but I've ordered 60# of wheat berries LOL).
