My friend who is a Weston A. Price Chapter leader, just came out with her Gluten-free Traditional Food cookbook. It's available to download on-line for $5. It's called "Living, Loving, and Cooking with my Daughter" http://www.nourishingyouandyourchildren.blogspot.com/

I bought it even though we are not gluten-free. I think it was worth the $5 just to get her gluten-free pizza dough recipe that I know she and her husband worked on for YEARS to create.

Could you please tell us generally what flours she uses in her pizza dough? I'm not trying to steal the recipe; just wondering if she uses anything we don't buy, like coconut flour (expensive) or guar gum (yuck).

Is it possible to purchase a paper copy instead of downloading it? I'd much rather spend money on shipping than use up all my expensive printer ink.

And it would be nice to know what ingredients she uses- not all the exact proportions or anything but just a list of what flours she uses so I know to skip this book if it's heavy on bean flours or something else I can't tolerate.

Another here wanting to know what kinds of flours are used. Ds and I are allergic to rice, so that's a no go and I know that many people use tons of rice when cooking gluten free.

Her Pizza dough has Redmills All Purpose Baking flour and a little xanthan gum. On page 1 of her cookbook she lists 5 different flour combinations that she uses -- for example, one combination is millet, buckwheat, potato starch, and tapioca.

As far as printing it out -- I printed in grayscale on my computer so that I wouldn't use a lot of ink too. I like all the pictures so that I know what the food is supposed to look like.
