making whey and cream cheees with yogurt

so, i am making whey and cream cheese, for the first time, using yogurt (commercial, not homemade). the yogurt is organic and whole, of course.

in NF, it says it'll take a few hours, longer with yogurt.
well, mine has been soaking and straining for about 18 hours now, and i only have about 3/4 cup of whey. (i halfed the recipe, so i should have 2.5 cups of whey, and one cup of cream cheese)

just want to see how long it takes, in your experience?
do i just need to be patient, or does it sound like i'm doing something wrong?

Sounds like you're doing it correctly.

Homemade yogurt does tend to be thinner, so you'll get more whey from it. So the amounts they give might be for homemade yogurt. I don't ever recall getting near that much from commercial yogurt.

I always just drain it until the cheese is as thick as I want. I normally would drain for 36 hours.

I'll have to try homemade yogurt next time.
