My husband is currently working out of town 3-4 days a week, so I'm by myself with a one year old during that time. I find that even though I plan meals for the week, I'm to exhausted to make them when the time comes. And it always feels somewhat pointless to work really hard making a nice meal just for me. And then when dh is home we usually end up eating out or with friends or family. So I need healthy, easy, quick ideas to feed myself (since the babe is still primarily bfing) while dh is away, so I don't end up running to the mall food court at 7 o'clock at night. Also I can't stand eating the same thing two nights in a row, so making one thing and eating it all week won't work for me. Though I'm open on ways of easily disguising leftovers. Please Help.
