Meal Planning for one

My husband is currently working out of town 3-4 days a week, so I'm by myself with a one year old during that time. I find that even though I plan meals for the week, I'm to exhausted to make them when the time comes. And it always feels somewhat pointless to work really hard making a nice meal just for me. And then when dh is home we usually end up eating out or with friends or family. So I need healthy, easy, quick ideas to feed myself (since the babe is still primarily bfing) while dh is away, so I don't end up running to the mall food court at 7 o'clock at night. Also I can't stand eating the same thing two nights in a row, so making one thing and eating it all week won't work for me. Though I'm open on ways of easily disguising leftovers. Please Help.

Could you cook a few things when your DH is home and put them in the freezer? I personally like to make a large batch of chicken breats when they are on sale and marinate them in some italian dressing or whatever we have on hand bake them for 30 min at 350 and then let them cool and put them in freezer bags. Then when I am hungry I take one out thaw it in the micro for a min or so and make a quesadilla or a caeser salad, sometimes I make chicken pesto pizza(on pita bread). That way it is the same base, but there are so many options, I also like to cook up a bunch of hamburger and then can use it as a base for tacos, spaghetti or something else, I put in 1lb pkgs, but that's for my family.

I cook for myself and a picky toddler 3-4 nights a week while dh travels. I plan on leftovers for one night (from the weekend). Something very, very easy for usually 1-2 nights. Those nights are typically egg salad. Tuna would work as well. The third night, I sometimes get take-out, or I cook myself something a little bit more complicated, but not very. As you can see, I'm not a huge fan of cooking meat just for myself. It's too much trouble. But, I do like the pp's idea of grilling chicken at the first of the week to eat in various ways all week.

You could do the same thing with a starch. Make rice the first night. Eat it with frozen gumbo or chili (that you froze on the weekend or a previous week). The second night, make the rice into fried rice with some leftover meat from the weekend (or not) and veggies that you prepped on the weekend. The third night, you can make it into a rice salad by adding a few veggies, maybe some chopped grilled chicken, and a vinagrette. If you did all the chopping on Sunday afternoon, all of those meals would take less than 15 minutes to prepare, which is faster than getting take-out.
