birdseye fabric for flats--edges?

do i need to surge the edges? with a surger, or a zigzag will work?

if the fabric is 36" wide, and i want my flats to be 30x30, what do i do with the rest of the fabric?

If you don't have a serger you can just zig zag the edges. Before you make your flats you need to make sure you prewash + dry your fabric once or twice on hot to take care of any shrinkage.
With the excess width you can layer it and make doublers.
