I know, I make an awesome batch of turkey stock after turkey day. But I wonder wth that insert is made of, yk? It's a lightweight metal with a glaze on it - aluminum? Glaze ingredients?

How do the Amish make such huge batches I wonder? I'm going to ask next time I go out to the farm...

I'm so with you on this. My DH told me that the "UL" logo is often just a logo that is often slapped on; it means nothing to the Chinese. (DH is in an industry that does a lot of manufacturing in China, so he's very aware of the levels of manufacturing practices over there). It does not mean it's to code, especially if it's a low-cost item.

It seems that there's no perfect way to keep the heat on all night long is what I'm gathering. Although 12 hour stock has got to be nearly as good as 24 hour and certainly safer!
