what next? pork kidney fat

So apparently my butcher has brought in some 5 lbs of pastured pork kidney fat. now what?
Do i just render it? Does that make it lard?
how do i render it?
Store it?
Use it?

You mean the fat from around the kidneys, right? Rendering it would make leaf lard, I believe, which is the best kind of lard. I haven't rendered any pork fat personally, but I know there are directions floating around somewhere here on this forum if you search.

That would be the easiest to render and make the cleanest purest lard! Nice find.

When I was rendering tallow for soap I just boiled it about 24 hours then strained, throw out the solids and add clean water to the fat & put the pot in the fridge. Next day you will have a nice white disk of fine lard, scrape any bits off the bottom and discard along with the water underneath. Should keep in your fridge a long time.
