Pork Roast

I want to make a pork roast for my family on Easter. Does anyone have any good recipes. Also my MIL is Cuban so maybe with a Cuban flair with black beans and brown rice. Thanks!

my favorite thing to do with a pork roast is to make "carnitas soup" I make carnitas in my crockpot http://allrecipes.com/Recipe/Carnita...ng/Detail.aspx
while I make drunken beans in a stockpot http://allrecipes.com/Recipe/Kikis-B...ns/Detail.aspx I don't mash the beans. Then I mix them together. It's dh's favorite meal.

I enjoy a 6-hour pork roast, or a ginger pork roast, both get cooked for hours and hours in a closed pan (I use my soup pot). They essentially shred when they come out. I don't tend to care for faster cooked pork roasts, as they tend to be dry.

If you wanted to be fancy, I have taken a whole pork tenderloin, spiral cut it so it lays flat, marinated it overnight in pomegranate molasses, stuffed it with arugula, blue cheese and pine nuts, rolled it back up again, tied it, and baked it until done. You really need a thermometer to do it, so you can be sure the pork cooks through. But the dish was a huge hit at Thanksgiving about 6 years ago.
