So happy to be back!

I have been following the Vegan/vegetarian threads in search of some healthy foods for my family. I am not a vegan or vegetarian, but I hate having to buy meats at Costco. So I cut way back on our meat eating.

We just moved to a new province. I love this province. 10min away is a great farm with pastured meats and poultry. Not certified organic, but pastured and humanly raised meats. Local meats that I feel good feeding my family. They have it all beef, bison, turkey (turkey peices), chicken, and lamb. They even have free run organic eggs. And a great prices to boot. Yay!

Yes, I was in Alberta. Now we are in Saskatoon. I am so impressed with the availablity of local foods here. It's really important to people here. Natural pork and lamb were so hard to get in Alberta, and very expensive. I have also met so many people here who believe in a traditional diet, but don't really label it that way.

I'm always lurking over there, looking for recipes. Meat is great and all, but it's not very exciting culinarily (at least to me). I yearn for new ways of making kale or veggie casseroles.

I pm'd ya.

Chicharronita, I have become quite the cook. I love good food. I love good, fresh food. I made our first "meat, veggie, side" dish in ages. The side was honey baked lentils, but the meal was pretty basic.

I have decided I need to do great sides to go along with our roasted meals. Some fantastic vegetarian main dish. I have reduced my grain consumption throughout the day so dinner is all good all the time.

I make a pasta dish to satisfy the family, about once a week...maybe a little less. I made a great prime rib roast on Sunday to welcome dh home. To go with it a fantastic canelloni dish. The stuffing was broccoli, couliflower cooked really well so I could mush it. Keeping as many nutrients as I could by blanching and then steaming in a sauce of onion and anchovies. Then mushing everything up and stuffing it in to the canelloni. Then homemade tomato sauce on the bottom of the dish, stuffed canelloni, fresh basil leaves, a cream sauce made of creme freich and parm cheese and some of the veggie water, then some mozza and parm on top. This is our side so we are not loading up on pasta, but it's enough to keep us happy.
