Please? Bendy Tortilla Recipe

My daughter misses store-bought tortillas for their flexible bendiness. My tortillas have good flavor and make excellent quesadillas but they do not bend *at all* without cracking. I'd like them to be whole wheat, not corn.

Grandma Martinez's Tortilla Recipe (verbatim minus spectrum naturals)

4 cups flour
1 tsp salt
1 tsp baking powder
6 tablespoons shortening (1/3 rounded cup) *we use spectrum naturals non-hydrogenated
About 1 cup very hot water

Mix shortening in with dry ingredients with hands. Add hot water all at once & mix with spoon. Kneed with hands until smooth & not sticky. If you put too much water, add more flour. Bake on hot grill or skillet. Very good fried in hot fat with cinnamon & sugar or syrup.

whole wheat works but not as well as white. you could half and half it. Or just experiment and see how it goes.

I have to make gluten-free tortillas here, but the trick to making them bendy does seem to be adding fat- the Spectrum Organics shortening works well here

Is there any substitute for the shortening? I'm in a country where it's hard to find shortening.

Well you can use lard, if you like.

You def. need to use solid fats. Oil won't help be bendy.

I tried the shortening, and mine didn't bend. The next time I used lard, and they were absolutely wonderful.

I've used olive oil and coconut oil in the past but they cracked

I think I'm going to try the lard from our farm co-op and the recipe from Anna's Grandma next week when I can get the lard.

Does anyone have a tried and true bendy tortilla recipe with lard or CO & whole wheat?

the shortening mentioned in the thread previously is actually refined expelled pressed palm oil, that might be easier to find.

also, adding too much shortening or fat will make them crispy as well, It has t be perfect. Im mexicann and grew up watching my grandma and mom make them all teh time and till this day I cant get it right always too much or too little
