what nice things can i make for dd with coconut flour?

i finally got some coconut flour. we made coconut muffins with added dessicated coconut. but unfortunatly she wasn't keen on them! she dosn't like almond flour cakes/cookies at all so i thought she might prefer coconut flour because the texture seems more like regular flour (she is wanting a regular cupcake type cake), so after the muffins weren't a success i'm wondering what else i can make. we only use honey to sweeten and she's not too keen on the taste of honey either!! so i need to kind of disguise that taste. she is extremely fussy though about flavours and textures so i'm finding it very difficult to think of what to do. do you think just adding some vanilla might make a nice flavour similar to a cupcake or would it be very coconutty still?

any other recipes or ideas? thanks..

I think the texture just ends up inherently kind of corn-bready. I'm not sure how to get around that. Can you frost some muffins? Can she have butter? I'm wondering if you beat some butter, cream cheese, a little sugar/sweetener and spread that on the top if it would mask the taste a bit?

The only baked goods I've made so far w/ all coconut flour were the coconut flour bread and the blueberry muffins from the TIANA site. They have a recipe for brownies, and they specify they taste best the next day.

You can bake w/ ground flax (making all flax meal muffins without flour). I wonder if she'd try that as an alternative?

What about various natural flavoring extracts? I ordered a bunch from Frontier recently...lemon, cherry, etc. My mom ordered raspberry, and I think that had HFCS in it , but otherwise they seem pretty natural.

What was it that she didn't like? The texture, the coconut taste? The fact there was honey in them? Was the added dessicated coconut a problem, maybe? This information would help me know what to recommend. We make a lot of coconut flour treats, and ds pretty much likes them all, so I'm a bit lost without more information.

If it's a cupcake type thing she's wanting, then maybe leave out the dessicated coconut. And if the flavor's a problem, maybe make a spice cake or gingerbread. That's very flavorful. And you also might want to try Lilcrunchie's idea for frosting. If that frosting won't work for you, you could try a cooked egg white frosting. That's what I use, since dairy in any form is out for us. Seems like frosting might really help if she's looking for cupcakes. Of course, that shouldn't be a regular addition, but for special occasions. I always put frosting on when we go to a party (we take our own cake), or for ds's birthday cake, but otherwise we skip it.

Another idea would be streusel on top. I don't do that regularly, either, but ds really likes that.

Once I have more info I could probably make more specific suggestions.

Oh, and we usually make fruit muffins. Apple, pear, blueberries, cranberries, banana, you get the idea.

March's grain-free thread has quite a few recipes for coconut flour. We tried the blueberry muffin recipe and it was good enough. My nursling even put a few crumbs in her mouth.
