eggless birthday cake

I need a good, yummie recipe for a bday cake with no eggs. DD is allergic to eggs and peanuts, and thus we are making her cake. Something good, sweet, and that I can decorate. Haven't found any good ones yet. Thanx, this is also xposted in vegetarian/vegan

Eggless is easy. Google "Wacky cake" and you'll find lots of options. Wacky cakes are light and tender, the kind you serve from a square or rectangular pan, but you could decorate the top.

Or if you want to do something different, make a pudding cake. Not all are egg-free, but many are. Here's a good chocolate one, but you can find recipes in all different flavors (vanilla, lemon, etc.): Chocolate Pudding Cake II. Basically it is a fairly standard cake with extra liquid, and the extra liquid turns into a yummy, thick sauce below the cake layer. Best served warm with ice cream. It is not necessarily a cake you'd decorate, but pudding cakes are fun for a change.

A couple years ago I modified a recipe to make an egg-free, dairy-free chocolate zucchini cake that's really good. My older daughter now wants me to modify it again to make it gluten-free for her little sister. I can dig it up if you're interested. Edited to add: I'm not sure how well it would work as a layer cake though. It is probably a little too tender for that. I've always baked it in a 9x13 pan, and decorated it in the pan.

The first recipe I posted the link to is a Crazy Cake (wacky cake) with an eggless pudding option. I often make the crazy cake sans pudding in the wilton decorator pans and decorate them too.

Thanx ladies. These look good. I will have to practice a few this week, and see what will work best. Don't know how the pudding will work. And she is also allergic to peanuts and most chocolate companies produce peanuts as well, and she can't have the cross contamination. But we can substitute and do vanilla I'm sure. THanx again.

Perhaps you can find a "safe" cocoa powder that is produced without cross contamination.

I have eggless cakes on my blog (in my signature). My DD can't do eggs or chocolate, so there's a vanilla cake, etc. I just did a carrot cake for her birthday today (eggless, gluten free, dairy free, etc. - but there's a wheat version as well). And a really yummy frosting that I put yogurt in and it tasted like cream cheese. The cupcakes turned out really well. My little gluten-free nephew were really happy to be able to eat the same as everybody else, and my DD and DS could have them too. Even the non-allergy people thought they were good! I experimented over the last few weeks!!

If you can do soy, I've done the soy cream cheese frosting for carrot cakes too. Very yummy
