How do you store leftovers? I am going t be opening a childcare center and would like to be able to safely store letovers in the fridge. tia

I've worked in food service, so I can tell you what we did. You might have similar regulations.

All food had to be transferred to clean containers. We couldn't store food in the containers they came in. If you are storing food that the child brought with them, I would ask the parent to separate it into smaller containers, or do it myself.

Sandwiches and soups are only stored for one day, with the exception of frozen soup. Certain bread goods could be stored for up to three days if they are wrapped properly. We used Day Dots to mark foods (you can find them online or at a restaurant supply store). Day Dots are awesome little things that can be used for personal food items, too. No more guessing on how old something is.

P.S. Is the center in your home? Do you have enough kids to warrant getting another fridge, even a tiny one?

It will be a separate building. I am anticipating a maximum capacity of 22 kids and 5-6 teachers

Which plastics are the safest, or should I consider Pyrex glass containers w/ lids. Any ideas on this are appreciciated. Thanks
