So this weekend, for the first time, I made spatchcocked chicken. It was soo easy, quick, and yummy. Butterflying the chicken was really easy using kitchen shears... you just cut along the backbone on both sides. Takes like 30 seconds max.

It takes 30 minutes total to cook and is really delish. I didn't have a foil wrapped brick, but I put my faux Le Creuset dutch oven on top...and it worked well.
