I've been lurking for a while now and have finally started to dabble with meal planning. So far, I notice it makes food preparation so much easier when you have the ingredients and what to cook settled. I'm not sure how it's going to effect our food bill but I'm hoping that it goes down! DH and I are quite particular with what we eat - lots of fresh produce, DH likes low fat, no cream sauces. We have a new baby so I need things that are relatively quick and easy to prepare since I'm often interrupted with tending to her..OR recipes that can be done piecemail, LOL! I'm starting to freeze left overs so we have some dinners frozen again.

I'm only going a week at a time so far but this is what I have for the week since I'm going shopping today:

Monday - Leeky Linguine with Shrimp, asparagus and bread http://www.rachaelraymag.com/recipes...p/article.html

Tuesday - Meatloaf (we make ours with buffalo), mashed potatoes and corn http://find.myrecipes.com/recipes/re...cipe_id=393434

Wednesday - Veggie Chili over rice http://allrecipes.com/Recipe/Insanel...li/Detail.aspx

Thursday - Roasted Cod with mushrooms http://www.rachaelraymag.com/recipes...e/article.html

Friday - Tacos

Saturday - Freezer soup for lunch and dinner - husband cooks

Sunday - Sandwiches for lunch (dh likes tomato sandwiches and I do grilled ham and cheese melts) Broccoli Quiche http://allrecipes.com/Recipe/Easy-Br...he/Detail.aspx

Oops, I forgot to post last week but I did follow my meal planning and this week here is what I have:

Monday 4/14 - spaghetti squash with cauliflower sauce

15th - White bean soup with potato pancakes

16th - Bean and Lentil loaf

17th Mexican Lasagne

18th - Budgeted dinner out with friends (and picking up some organic beef!)

19th - Dinner party at a friend's house

20th - Left overs

that's all I got so far!

lunches will be leftovers. But actually, I'm thinking of switching around and making lunch the bigger meal and dinner be leftovers and snacks. I don't like feeling so full in the evening as it gets warmer weather...
