I wanted to give an update. After much debate and a lot of shopping around, I bought my daughter a twin size 6" Harmony Deluxe Latex Mattress from Organic Grace. I also bought a pure rest wood foundation since the bed I bought dd was not a platform style bed, and this works like a box spring and it is finished wrapped in the same material as the mattress so it looks just like a box spring. It all shipped faster than we expected and dd was so excited about having her own new bed. She loves it, I love it! I can't wait to replace my son's mattress next, hopefully in the spring, and then after that our mattress. Now all of a sudden dd is sleeping in her own bed and for the first time in almost 5 years Dh and I are all alone in our king bed. I also tried a latex pillow, although I have since passed it on over to DH. It was too fat and not squishy enough for me. BTW - dd has been sleeping like a dream!

If anyone else is looking look into Wellspring Futons. You can order them without the fire resistent stuff with a doctor's note. You can also get an organic cotton casing. We have the top of the line one they make for Ds and it is the most comfortable bed in the entire house! I love this bed and can not wait until we can afford a king size for us!
