Soaked steel cut oats and granola

Does anyone make granola from soaked steel cut oats instead of rolled oats? I've been doing it this way but it's a little too crunchy for me. I'm thinking about halfway cooking the oats before I mix it with the other ingredients.
Any thoughts or experiences?

Does it taste like grape nuts? If so, I may have to try it! For some reason I always loved the texture of that cereal, but I never eat it.

You could try adding a bit of water during the initial soaking. When I sometimes add the honey/sweetnerand water mixture and forget about actually gettting the granola IN the oven until hours/day after, it ends up softer in texture than if I had immediately toasted it.
