Dh hates cruciferous vegetables and had seconds of these caulifouwer fritters I made the other day.

Blanch 8 cups of cauliflower chopped small in boiling water for 5 min. Drain and cool a bit.

Mix 5 eggs in a large bowl, add
1 cup of grated parmasen (or romano which is what I prefer)
a little salt and pepper, I used white pepper so you don't get the black flecks.
and 1/4 cup of finley chopped parsley.
mix well

add the cauliflower and mix

gradually sprinkle 1/4 cup of flower over the top and mix

You then fry them up like pancakes.

They are yummy
