So I got a 4 oz. box of fresh organic basil at Trader Joe's yesterday. I was also in the mood for cucumbers, and got a 16 oz. box of persian cucumbers at the same time.
Here's what I did with them:
* Peeled cucumbers, then quartered them lengthwise and cut into chunks about 1/2" in.
* Removed stems from basil, chopped leaves and buds very finely (largest intact pieces were maybe 1/4" square)
* Combined basil, some balsamic vinegar (maybe a Tbsp... what I had left ;-), some seasoned rice vinegar (maybe 2 more Tbsp), some olive oil (oh, gosh, maybe 1/4 cup?), salt and pepper. Still very basil-y, but the oil kinda tamped it down some.
* Dumped into salad bowl with cucumbers, mixed, and let sit in the fridge for a couple hours.
Yummy! Can't say it sent me straight into active labor ;-), but I had fairly regular if not painful contractions from dinnertime through bedtime.
