squash,slice or cube, steam or boil about 2 min, drop in ice water drain and pat dry freeze in single layers then transfer to jars or bags.
zuchinni, same as above, or you can grate and freeze in 2 cup portions for bread and soups and sauces no blanching required
strawberries, wash slice freeze
onion, chop and freeze
bell peppers chop and freeze
tomatoes,drop in pot of boiling water 15-30 sec then drop in cold water skins slide right off. Then I chop them up and cook them down to chunky sauce and freeze in 1,2,4 cup sizes for all my cooking needs.
I also like to dry a bunch of our tomatoes and onions and squash.
