what do you do with turkey? (doing mini ED)

I've already completely eliminated dairy, eggs, all nuts (seeds is next), & soy. I'm starting to cut down on wheat and hope to be GF in 1 more wk. I don't plan to do TED , but do want to eat less beef & chicken and eat more turkey , and just more whole foods in general (no more packaged anything).

I am brining overnight a 15 pound organic free range turkey I got at WF and plan to roast it Sat (tomorrow).

I plan to make:

turkey soup with GF pasta & veg
turkey sandwiches (is there any good GF bread??)
plain turkey

what else do you do with your turkey?? :

If you're still doing nightshades like potato and tomato:
grind some up and make turkey meatballs (in broth or in marinara sauce served over rice noodles)
make some gravy (thicken with tapioca starch) and do turkey and gravy over rice or mashed potatos
If you're still doing corn:
grind up some more and make turkey tacos

Substitute chicken for turkey in (see my blog in my signature for recipes):
chicken mirabella
chicken marsala
coconut chicken
jambalaya
orange curry chicken

thanks !! can you grind turkey in the food processor? (I've never done before!) I printed out those recipes and think I'll try the coconut dish 1st - yuum!
