I'm so excited to try this, but first 2 dumb questions: Do you bake it uncovered? And do you eat it plain, like a side dish, or over rice or something as a main dish?
I do it with lentils that were preboiled with bay leaves. I bake it covered and take the cover off for the last 10 minutes to brown the top. It is great as a baked beans substitute. We also like leftovers as a pita bread sandwich filling, assuming the lentils aren't too wet.
I made this a couple weeks ago for a dinner party. I used red lentils. There was only the smallest little serving left. Yummy!!! The recipe I saw said she sometimes substituted 1/3 c of rice or barley for some of the lentils. I am definitely going to try that next time. Oh and I forgot about it in the oven and cooked it for over 2.5 hours. It was like lentil mush but so good.
That's so funny, this is what I have baking in the oven right now! I can smell them cooking. I use 1 cup of lentils and 1 cup brown rice and serve it as a main dish with veggies on the side. Oh so easy and delicious! I have normally used brown lentils but this time I am trying the little green ones. :
