How do you (any of you) prepare tempeh? I got some on sale at WF and decided to try it out. I steamed it for a little bit in slices, then put it in a little oil and browned in skillet, adding water on occasion to allow it to steam further, then seasoned with soy sauce and other things. And it just never seemed to really cook through well. The next day, though, I mashed what was left into the leftover quinoa I had, diced a tomato and put an TB of this AWESOME kalamata olive dip I got from Costco in there. That was good, but I have another package of tempeh and I would like to try out something tried and true that one of you have had good success with. Thanks!

It's hot in Houston, people! I can tell I will be forced to turn on the AC soon!

Anyway, we had Black Bean/Corn salad last night, with whole wheat tortillas and Ziegenbock (thank you, DH!)

I knew I wasn't going to feel like cooking Friday night, so I put the salad together Thursday night while cleaning up the kitchen. It was cool but spicy and refreshing.

Ok, upon retrospect it's not that hot right now. I just have no way to get that cool early morning air into my house. We need an attic fan...

Yesterday afternoon I delivered my baby at home! My husband went out and got us Thai food. I think I had the Cashew Tofu with rice. It was so delicious considering how hungry I was!!! I'm sure we'll have leftovers tonight.

Congratulations, Sarah.

Today I am really trying to focus on eating better. I didn't eat well at all last week. So I had a green smoothie for breakfast. Lunch is going to be a big salad with chickpeas and loads of veggies. Dinner will be mango-cilantro spring rolls and some lime cilantro rice.

Tonight was more of the same - tempeh with lemon dill sauce (fresh dill and Egyptian onions at the Farmer's Market this morning!), rice and roasted asparagus.

5/2 Apricot-glazed tofu, "sour cream" and caramelized onion mashed potatoes and roasted green beans - I could eat this meal every day.

5/3 Veggie burgers with lettuce, tomatoes, sprouts and avocado, sweet potato fries with chipotle dip (better than sour cream + veganaise + chipotle powder and garlic powder) and steamed broccoli.

5/4 Falafel sandwiches and roasted zucchini kabobs with oregano and marjoram. Was a big hit, even with Ms. Picky Picky.

subbing. dh and i are discussing how to live as vegetarians. it was easy for me when i was single and living with a vegan roommate. not too easy to do on my own, lol! thanks for this thread, it will give me lots of good inspiration, i'm sure!

It's been a Veganomicon weekend here:

Saturday lunch - Cheezy Sauce w/ bowtie pasta (mmmmmcomfort food)

Saturday dinner - Potato Kale Enchiladas with yellow rice (from a packet...I threw in some chopped onion and red and green peppers) and spicy black beans (it was so cute I took its picture: http://www.flickr.com/photos/8671453...n/photostream/)

Sunday dinner - Seitanic Red and White Bean Jambalaya, with La Dolce Vegan "Buttermilk" Cornbread and spinach salad with avocado, strawberries, and tangerines

I'm officially tired of washing dishes now! I have easy "work night" food planned for the rest of the week.

YUMMM! Can you post the recipe for the apricot-glazed tofu? pretty pleeze?

Tonight we had sloppy joes with Gimmee Lean, which the kids liked and I devoured. Dh had a steak. The kids ate ALL the Ceaser salad, the little dangbats.

Last night was baked ziti at a friend's triplets first holy communion. I love being the token jew at these events!

Friday was fish - I ate about a bite and didn't want another taste. The sweet pots (japanese jewels) were SO yummy I gorged on those, as well as garlicky kale and applesauce homemade from the last of our cortlands.

Tomorrow - here's a tricky one! I have to get it done and on the table by 4:45. Crock pot? I'd really like to try the zucchini fries, though... Maybe garden burgers and use up the last of the burger buns! AHA! Score!

Tues: leftovers - whatever is in the fridge (sloppy joes, rice, black beans, maybe some fruit, can't think what all else) plus greens on twice baked potatoes.

Wed: Tacos I think. Again an early dinner (actually it's early dinners every single day this week, till Saturday). Must make a potato soup (we have an abundance of potatoes for some reason - sale at the hfs or something!), and maybe do falafal sticks with the works in pitas one night. Ds doesn't love them, but he'll pick at stuff ... I wish I felt good about giving him stuff to just pick at, but he picks at the lamest stuff and leaves all the good nutrients on the plate. Any ideas? (aside from vitamins, which he does take)

That's as far ahead as I can get right now. I these threads. Normally I lurk, but I'm trying to be more accountable for 1) my nutrition and that of my kids (clearly dh is out of range for me!) and 2) expenditure on food - the more accountable for the meal planning I am, the better I am with the $.

We finally got some groceries over the weekend, so we'll have some good meals this week. Last week, a doula client had twins, and a good friend passed away. With everything going on, we ate horribly.

Last night, we had enchilada pie and salad.

I'd love the apricot-glazed tofu recipe. It sounds yummy. Plus I am putting together some recipes for my grandma who is trying vegetarian living as part of her cancer battle

oh! I just wanted to post that I tried something new. I tried 'spicy black bean empanada's' out of a Vegetarian Times book.

They were ok, not great. but I'm going to try something new later this week too. We're having pizza tonight (homemade).

I had some bok choy I needed to use so tonight I made Bok Choy, Edamame, Cashew and Orange Rice from Vegan Express. Very easy and well-balanced meal. My husband declared that I should add it to the regular reportoire. He is having seconds as we speak.
