need diet ideas for dairy allergy

So I am convinced DS has a dairy allergy. Had a diaper and a generalized rash for 5 weeks plus a runny nose. I went off ofdairy for a week and it all went away. Then I forgot and at something like 4 slices of very cheesy pizza and his rash came back the next day.

Anyway, I am having difficulty with what to eat. I've mostly been eating lots f sandwiches (gets boring). DH and I both LOVE cheese and most of our usual meals contain lots of it. I can get by without drinking milk, but should I avoid thinks that require milk for cooking (i.e. pncakes, gravy)? What are some ideas for yummy (and quick) dairy-free meals?

Any vegan cookbook would have good recipe ideas. Check your local library.

You can substitute a milk substitute when baking/cooking. Soy, rice, almond, oat, hemp milks are all available at nfs and most regular grocercy stores. Also my bff's son can't tolerate when she eats cow dairy, but is fine when she eats goat dairy, goat milk, goat cheeses etc.
