it may be too late for me to save my new cabinets unless someona has a really accessible kind of finish for wood.

I think the stain and eurathane have already been bought though... ugh.... How do I protect us from getting sick?

I'm not sure what you mean by "accessible" but we just used Safecoat products to refinish our wood floors and were delighted with the results. They have several very low-VOC wood finishes that do not contain formaldehyde. We used the Polyureseal and they have several other options. They also carry zero VOC paints and primers.

Can the stain and sealant be returned?

Bioshield also makes no-VOC stains, and their stains don't need a separate sealer (polyurethane).
