You can use plastic canvas that you can get at any craft store.
I got the idea from someone at Ravelry to use a yogurt container. It worked fabulously: My Cabled Newsboy.
There's also a product called Timtex Interfacing that is marketed specifically for the purpose.

You can buy the plastic usually in the yarn section. It sells in sheets. I have seen it in pretty much any craft store like Michaels or Joanns. I have also seen it in the knitting section at Walmart.

I designed my own toddler newsboy style hat last spring and cut the plastic for the brim from the side of a large yogurt container (like the big tub...can't remember just how much yogurt is in them). This way it was already slightly curved and was perfect for the brim for a youngin's hat. I am not sure if it would be big enough for an adult hat, but it might.

My kiddo and I just made Topi from Knitty. She's 9, so I did the top with the increases, she did a lot of the St st middle part, then I did the decorative stitch and the brim. But she made the hat. Just ask her! 
Anyway, folks on Ravelry said that the mesh stuff didn't work so well. So we bought a bottle of soda just for this. My DP took the hit and drank most of it. What a sweetie, huh?
I just put it in tonight and it worked fabulously!

Oh- I meant to say that we (I) used the curve of the bottle to shape the brim. It worked perfectly!
