I'd especially like to see links or photos for less common methods. I want to try something new!

I have video tutorials on my site for sewing elastic in aios, fitteds, and covers. I hav the standard method and the blind method for the diapers. Not sure if these are what you're looking for though.

There are a few tutorials on the diaper divas board about sewing elastics (you have to log on to get access)

I really like this one:

These days I've been using this one, but it works way better if you use a 3/8 inch elastic instead of a 1/4 inch (especially if you're using more than a few layers of knit)...I find it gathers much better:
