Quinces

I just bought some quinces (approx 2kg) and wondered if any one knew of any recipes that don’t require large amounts of sugar to cook them? This is the first time I have ever bought or cooked with them so any recipes would be great. I am not sure yet if I am going to poach, bake or turn them into jelly or a paste.

My grandmother makes very good preserves with quinces. I wished I knew the recipe. I'll make sure to get it one of this days.

Mostly quince are way too sour to eat without sweetener, unless they are left on the tree through some good frosts-- the slight rotting makes them soft and much sweeter!-- but they can do really good things when diced and added in small amounts to applesauce to give it an extra tang, or to apple pie. But it's a strong taste, so you don't have to add much. Our neighbor used to have a quince tree, and I kind of think of it like rhubarb. More of a condiment than a fruit.

Thisgives suggestions for savory uses, with meat. I'm vegetarian, but they sound exotic and may be good-- and no sugar.

How about Apple Quince Pie?

No added sugar except the rum.

Thanks for the replies; I ended up poaching them but they are so sweet even my kids won't go near them. Now looking for I can add the poached quinces to use them up
