1 lb ground beef
1 cup pureed tomatoes
1 bell pepper - dice
1 small yellow onion-diced
fresh chopped oragano and basil to taste
sea salt to taste
2 cloves minced garlic

brown ground beef and drain excess fat (not all of it, just don't want your bun to get soggy too fast) add remaining ingredients and let simmer on low for 30min to incorparate flavors and reduce the tomato juices a bit.

Serve on sprouted wheat buns with a nice salad. My kids prefer to have a slice of cheese on theirs as well.

Sloppy Joes
1 Onion,Thinly Sliced
4 Celery Stalks,Thinly Sliced
1 Red Bell Pepper,Thinly Sliced
6 Garlic Cloves, Finely Chopped
1/2 Jalapeno, Finely Chopped (optional)
2 lb Ground Beef
1-8 oz can Tomato Sauce
1/4 c Ketchup
1 t Tabasco
2 t Worcestershire
1-14.5 oz can Fire Roasted Tomatoes (or any whole tomatoes)
2 T Sugar
1 t Hot Sauce
6 T White Vinegar
2 t Dry Mustard
1/2 t Chili Powder
1 t Paprika
1 t Cumin
1 t Oregano
Salt & Pepper,To Taste

In a large skillet, combine the onion, celery, and bell pepper with a little olive oil. Cook over medium heat approximately 5 minutes, or until softened and translucent. Add garlic and jalapeno, cook another 5 minutes. Transfer to a heat proof bowl, set aside.

Add the beef to the hot skillet. Break into small pieces with a wooden spoon. Cook a few minutes, until about half cooked.

In a small bowl, combine the ketchup, worcestershire, tabasco, hot sauce, sugar, and spices into a paste. Add to the meat, stirring to distribute. Add the tomato sauce, and vinegar to the meat. Break up the roasted tomatoes with your hands, and add the entire can to the meat (juice and all). Stir the vegetables back in, and simmer until no longer soupy. Add salt and pepper to taste.

The sauce should be below the level of the meat and fairly thick when it is done.

This one is not exactly the most, "traditional" (includes ketchup), but it is soooo good. My DH and kids gobble it up.

This one is pretty easy:

1 lb.lean ground beef or bison
1 medium-sized onion,finely chopped
1/2 large red bell pepper,seeded and finely chopped
1 large rib celery,finely chopped
1 clove garlic,minced
6 oz. tomato paste
2 Tbsp. cider vinegar,or more as needed
2 Tbsp. firmly packed brown sugar, or more as needed
1 tsp. paprika
1/2 tsp.dry mustard
3/4 tsp. salt
1/2 tsp. chili powder
1/4 tsp. freshly ground pepper
1 tsp. worcestershire sauce
Dash of hot sauce
Dash cayenne pepper

1. In a large skillet cook the meat with the first 4 ingedients, stirring to break up the meat. When the meat is cooked through and all other ingredients and simmer over low heat until veggies are soft. :
