coconut and thyroid - Page 2

Bumping this older thread! The OP (hey you! ) asked for some annecdotal stories from coconut oil users on how they incorporated CO into their diets. How much did you take to feel better? How did you use it in your cooking/recipes?? I'd love to know!

I totally missed this post the first time around but it's so funny that it's brought up now, someone was recently trying to get me to read this book.

I'm making a list of books to read for after this kid is born and Garden of Fertility and the one you mention are on the list!

I have a spoonful of it melted and put into my smoothie every morning along with raw milk, banana, frozen strawberries and a raw egg - oh and honey too.

I also use coconut oil in baking and sometimes to fry onions in for things like shepherd's pie. I also make a coconut custard which is delicious!

5 eggs
1 can Native Forest (bpa free) coconut milk (not low fat)
3/4 cup maple syrup

beat together, sprinkle top with cinnamon and nutmeg and bake in a water bath at 350 til it's set - about 45 min +/-

For water bath, make custard in a casserole dish and then place in a larger cake pan and add some water to the cake pan so the casserole is surrounded by water. Makes it cook light and fluffy.
