Looking for TF recipes with lots of coconut and for CO usage ideas

What's your fave?? How else do you use CO?

Here's how I use it:

Baking, melt it first (some things, like cookies, are best IMO with 50% CO and 50% butter rather than 100% CO)
Smoothies
Cooking any and everything (eggs, veggies, meats, etc.)
Fried potatoes are divine in CO (probably not very healthy, but hey, it uses CO!)
Granola
Granola bars
I have made something like a coconut/peanut butter/chocolate ball-y bar-y sort of thing. It was way to rich for my tastes, although DH and my friend's DH loved them.

On popcorn - it can be totally slathered on and it's great. Add nutritional yeast and/or onion powder for ranch flavoured popcorn.

In oatmeal - again you can put tons in and it tastes great. Add coconut flakes and/or banana slices and maple syrup.

And of course smoothies - in particular banana/tropical fruits/some kind of milk.

CO fudge stuff too:

cocoa, sweetener, grated coconut and enough melted CO to wet it all

put into ice cube trays in the fridge to firm up then pop out of ice cube trays and store in the fridge.

I add CO to my hot green tea in the morning along with some honey

I use it to cook like I used to use ev olive oil - for everything
I also drink it every morning in coffee w/ cream - it is fabulous
It sits well on top of any stew or chili...
When we get a sore throat, we take it by the spoon
like pp - oatmeal, popcorn, smoothie, "bars"

wow, i didn't realize that you can use coconut oil for so many things!

i add unsweetened shredded coconut to pancakes and cookies and such things.

coconut broth
coconut milk kefir, this is delicious with the consistency and zing of creme fraiche and the richness of coconut
