Can you store soaked and cooked legumes in the fridge? I haven't been able to find any info. on this in NT. I would like to cook all my legumes for the week on one day and then have them on hand in the fridge for dinners, salads, etc. I was thinking maybe keeping them in their cooking liquid with a handful of celtic salt in an airtight container. Any suggestions?

I'm the only one here who eats them, so I cook up a large batch of beans (soaked, of course) at a time. I drain them, because that's how I use them), cool them off, then bag them in quart freezer bags and freeze them. I pull out a bag when the bag I'm using runs out. I keep them in the fridge for a few days, but usually not a week. That might be a bit long. But then, I cook them in stock, so that may affect how well they keep.
What I would do if I were you, cook them all up for the week, freeze half of them, use the unfrozen first part of the week, and pull out the frozen mid-week. Hope that made sense.

OR, assuming you use more than one type of legume, you could cook a bunch of lentils one week, use what you need and freeze the rest. Then the next week you could cook up a bunch of beans, use what you need and freeze the rest. If you do this, you'd want to freeze them in quantities that you would use for whatever recipe you use them for. A few weeks of this, and you'd have a nice freezer stash. Then you'd just make more when they run out. Can you tell I love my freezer?

i keep soaked, cooked beans in the freezer and put them straight into whatever im cooking still frozen.
a handful of frozen beans warmed up in the oven sprinkled with a little kelp and sea salt also makes a great toddler snack.

I soak 'em, cook 'em, drain 'em & freeze 'em in small containers. I just finished cooking a massive batch of black beans today.
