Can someone PLEASE tell me how to do this!!!!!

i know how you put quotes from more than one person... you click on the little quill looking thing at the bottom of each post you want to quote.

the one that says quote will do the whole post. the next one will do every post that it was clicked on and the last is for quick reply. i would like to know how to select a piece of a paragraph to quote instead of the whole thing and then deleting what i dont want. can we do that?
