Lazy girl dairy free pizza

Okay... so my version of dairy free is whacked. Katie's only a little intolerant, so we seem to be able to get away with goat cheese and I don't look for "sneaky" dairy ingredients in items. So, with those caveats in mind, here's my version of "dairy free" pizza-and I promise you it's WAY better than your typical slice of pepperoni!

-PS-measuring is for the birds! This is all tossed together by eyeballing it.

Pizza crust
-we just buy the fridge roll stuff

Sauce
-Mayo
-around 2 tblspns Olive Oil
-freshly crushed garlic to taste


Toppings:
-Thinly sliced Zucchini
-Halved grape tomatoes
-Grilled chicken
-1 container of Feta
-Spinach


Bake according to crust instructions...but remember that the feta won't melt. I also noticed that the top of the crust didn't brown as quickly as it did for our more traditional pizza. I think the mayo does something to it-so be sure to pull up the edge to judge doneness.

sounds delicious...but mayo? on pizza? seriously?

mayo sicks me out.

but the rest...sounds like tonight's dinner! maybe with moose instead of chicken, though. thats all we have.

i know-Mayo sounds bad! But it helps the topping stick down, and you aren't tasting it-it cooks in! Most the recipes I saw had it if there was ANYTHING for a "sauce" besides olive oil.
