We use both rice and soba (buckwheat) noodles from an Asian grocery as alternatives to rice with tofu or other Asian dishes. They could also substitute for wheat/semolina pasta.

Quinoa is great, though millet is far more economical. Kasha could also be used for a change from rice.

Just remember to read labels super-carefully. I have not yet found wheat-free buckwheat soba noodles, and kasha sometimes has wheat.

Oh yeah, pp reminded me about yucca. We used to eat that a lot too. We'd boil it till it was soft but not too soft, slice it into french fry wedges and fry it then eat with mayonaise.

Hmmmm... is yucca at your grocery store or is it a specialty store item? We have a really nice (BIG) grocery store with a good import/organic section but I'm not sure I've seen yucca? We're in rural northern NY.

I'm taking notes though!

Have you looked into a local co-op/buying group for the things like rice pasta? We can get the Tinkyada brand pasta, as well as a few others, in bulk through our buying co-op. The prices are comparable to the store-bought cheapo wheat pasta when we buy in bulk.

Also, rice tortilla shells are not expensive this way, either. So you can continue with your tortilla dinners.

Just thought I'd mention those. I make my own rice tortillas now, and we don't eat a lot of pasta, but those really saved my butt when we first went gluten-free.

I'm allergic to wheat and can't eat buckwheat. Also, I can't eat spelt.

those of you who cook rice with coconut milk, can you elaborate, my try didn't turn out so well, not sure if it was due to using brown rice or what....

I'd love some of these recipes. I'm trying to branch out and try new things with cheap eats.
