What?? She does? Ooops! I used the jellied sauce, an organic one, but I don't know if you can find that around this time of year. Probably regular you could. Well it sure was good with the jelly ... maybe I'll try juice next time. Ha!

I am glad you liked the spinach bake. I thought it was pretty yummy, and yes it does make a ton!

LOL, my food blog is long gone! I've been doing good to cook 2-3 times a week. My baby is soooo needy lately, and he *hates* for me to be in the kitchen doing anything other than holding him.

That recipe on her website sounded like it called for an awful lot of juice...I was thinking when I saw that, "Man, that's going to be some watery chicken." So I decided to go with your way anyway. I'll try it with the jellied kind. I looove cranberry sauce, so I'm sure I'll love it that way.

I sat down to write out a plan this morning and looked at the calendar and holy cow, I have to cover 18 days until the next payday! Thank goodness there is still meat in the freezer and the pantry is still pretty full. Dairy and produce will kill us as usual, but preggo lady is craving cottage cheese with fruit something fierce.
:

1. Homemade Mac 'n cheese, cornbread (ds's birthday pick tonight)
2. Subs
3. Rice & bean burritos
4. pork stir fry
5. Parmesan chicken
6. tacos
7. homemade pizza
8. breakfast for dinner (sausage, french toast or pancakes)
9. BLTs
10. leftovers
11. steak & potatos, veggie
12. hamburgs & hotdogs, fries
13. BBQ chicken, 2x baked potatoes
14. Swedish meatballs
15. chicken casserole
16. toasted cheese w/ tuna & tomato soup
17. chicken fajitas

I'm thinking I want to make summer really simple and avoid stove/oven cooking when possible. I had a system last fall for a 3 month repeating menu and I want to do it again. Especially b/c eith me, DH, or all of us are away so much this summer and we're getting bored with the frequent meals on our spring rotation. So here's my thought, I'll repeat these for the next 2 months at least:

Sa-Fondue and fruit/veggies and bread
Su-Vegetable/chicken kabobs and brown rice (whatever looks good at the farmers market that week; I'm thinking I'll make an enormous batch of brown rice and freeze it so its a light stove day)
M-Salad with mock chicken/chicken
Tu-Pasta primavera (whatever veggies are left) and white bean spread (I wonder if this would freeze well?) on French bread
W- Out/order in/leftovers (this is our date night)
Th-Gazpacho soup and grilled cheese (I've only once made gazpacho soup, but it's dhs favorite and I have a recipe I hear freezes well, so I thought I'd do a giant batch for all summer)
F-Veggie burgers and spud puppies

I'm thinking that many will be different with diff fresh herbs, cheeses, and veggies each week, but I'm feeling like not making a new list every week or two will streamline the process for me!

T-nachos, turkey pinwheels
W-eating at my mom's or out somewhere
T-spaghetti, bread, salad
F-pork chops, some sort of veggie, mashed potatoes
S-chicken/bacon/jalapeno sandwiches, raw veggies, fruit
S-chorizos and sauerkraut

Here's mine for the rest of the month. Breakfasts are always the same, unless some hidden urge emerges. Lunches during the summer are simply chicken or egg salad because I can make a large batch on each and only heat up the kitchen once a week. Also, we pretty much have salad every night because my husband doesn't like cooked veggies. I can't complain because salad is easier anyway.

We have been sick with a stomach bug for what seems like forever so if some of these look like repeats, they probably aren't, we just didn't eat them before. We weren't wanting much to eat so I didn't do much actual cooking during that time. Here is what is in the plan for the next week.

21 - Spaghetti, Salad, Garlic Bread
22 - Spinach & Bacon Quiche (from freezer), Salad
23 - Cashew Chicken & Broccoli over Rice
24 - Refried Blackbean & Cheese Quesadillas
25 - Chili Dogs (natural/organic hot dogs), Homemade Baked "Fries", Watermelon
26 - Chicken Veggie Pasta Salad
27 - Breakfast for dinner (Hashbrowns, eggs, biscuits, maybe sausage)
28 - Lemon Crumb Tilapia, Lima Beans, Brown Rice, Green Salad

24- white beans, rice, greens, cornbread muffin
25- grilled cheese, pasta salad, fruit
26- DH is on his own-- he will probably do breakfast for dinner
27- hamburger steak w/ gravy, mashed potatoes, corn on cob, green lima beans-- ds loves this meal and requested it this week
28- angel hair pasta with lemon, chicken and broccoli, salad, sauteed veggies

And I know this is probably really simple, but could you tell me how you make the hamburger steak with gravy? My mom used to make something similar (cube steak w/ gravy) and the memory of that totally brought back the comfort food feelings!
