A hearty lentil soup is the only way to get my family to eat swiss chard, kale or even spinach. A little chopped up blends nicely with the flavors of the lentils.

To make my afformentioned too salty Chickpea cutlets edible, I made mushroom gravy (the recipe from Veganomicon, but didn't add any salt). I made that, mashed potatoes, and (canned ) green beans.
It was really good, a perfect combo, and my omni grandparents raved over it!!

It's one of Dreena's recipies, "Vive Le Vegan"...Chocolate P-nut Butter Squares. These were really good. PM me if you don't have the book and I will pass along the recipie.

I love Dreena's recipies. She has made the vegetarian/vegan transition very easy. Especially with her baked goods and sweets.

I also made her "Fudgy Brownies" from the same book. I doubled the recipie and made it in the same sized pan called for, baked it an extra 20min. OH, MY, OH, MY!!!! I love a good thick, fudgy, chewy brownie. These were amazing. I didn't chop up the chocolate, just left the chips whole. They were better then my deadly recipie that calls for 1lb of butter, 1.5lbs of chocolate and 8 eggs.

That's really good to know. I am vegan, though my kids are not, but I still do not bake with any eggs or dairy. I *almost* bought her book but bought another instead, which I totally love, but I couldn't buy two at once. This will be my next one because the desserts looked really good! I LOVE brownies!

All three of her books are wonderful with great dips and baking. I am veg leaning towards vegan, but my family are omni...I also prefer to do vegan baking.

I looked at Keeta's blog and adapted a recipe for cashew cheese (thanks Keeta!). We made vegan/gf mac and cheese, steamed broccoli, and green salad. It was great. The kids are so happy that we have a "mac and cheese" recipe now!

We went to a friend's for dinner tonight and typical of me, I brought something just for myself to eat. I brought spiral noodles with a veggie thing to go over them: garlic, onions, red peppers, mushrooms, tomatoes and asparagus sauteed in olive oil with nutritional yeast & jalepeno hot sauce, YUMMAH! It was reaaly good, i had some watermelon, pickles and olives and pretzels there too.

Italian Flag Salad (orzo (1 cup uncooked) w/ blanched green beans (8oz), sun dried tom-lots, basil-lots, Italian parsley, rice vinegar (1.5 tbs), lemon (1tb), olive oil (1.5tbs), garlic (2 cloves minced)& S&P)

So good!

Well last nights swiss chard was a disaster...I don't know why I just can't get past the taste of greens & sprouts. They are so good for you, but they taste like dirt, I just can't do it.

Tonight...who knows, maybe some veggie & bean burritos. I feel aweful. I just want to crawl in bed & sleep for many days, but since I can't & we can't afford take out again, burritos might be easy enough. I think we have frozen pizzas too...maybe I'll do that...either way ::

Last night was portobello mushroom ravioli (SuperTarget) and spinach salad. Tonight was spaghetti.

The days I work, I have less than an hour between when I get home and when I go to bed, so dinners need to be quick!

Chik patty sandwiches, slathered in vegenaise, fries, and to make up for those two items, sauteed collard green with apples and pecans.

And now I am having some of a delicious Newman's Own chocolate orange bar. Mmmmmmmmmm.

I made a variation of raw tacos (using walnuts/almonds and spices), fresh salsa, and salad w/ greens and cukes from our CSA box. Yum, yum and yum!

He kept picking out each thing and saying "what's this called?" and I would tell him, and he'd say "oh!" and then eat it.

We received our first CSA box today!t was finally warm enough to do spring rolls, so I did those, a peanut sauce to dip them in, and some veggie fried rice. The CSA box had cilantro in it, and it was the loveliest-smelling cilantro I have ever smelled. So exciting.

Have you tried putting them in something that disguises them? I do creamed spinach sometimes (with fresh spinach and a homemade "cream" sauce). I tend to throw collard greens in things that will be creamy, too. Like in a chik'n pot pie. They are just a small part of a group of veggies. They often get put in creamy white beans as well. Even my DSD doesn't put up a fuss about them when they are in a cream sauce.

Also, I've noticed that sometimes they taste better the next day. Yesterday, I made collard greens with apples, garlic and pecans (sauteed, a little veggie broth and squeeze of lemon at the end). I had some at breakfast this morning, and they were WAY better after having sat for a bit. A little milder.

I chopped some carrots and cucumbers into skinny sticks, maybe 2 inches long. I also chopped up some seitan, and sliced radishes. I cooked some rice noodles and let them cool completely.

We bought rice paper wrappers at the Asian grocery, but a lot of regular groceries or natural foods stores have them. I put one in a pan of cold water and swished it around for a few seconds until it *just* started to soften.

I laid the wrapper down carefully on a cutting board. In the middle, I put a little piece of green leaf lettuce. On top of that, a little pile of the rice noodles. Then a row of the chopped seitan. Then the carrots, cucumbers, and a row of radish slices. Over that, I put a few sprigs of cilantro. This pile of stuff was somewhat rectangle shaped.

I rolled them closed like a burrito. I fold one long side over, roll a bit. Fold both short sides over, roll until closed. The wrapper sticks to itself, but is surprisingly forgiving if you have to redo it.

For a sauce, I mixed peanut butter, hoisin sauce, a dash of rice wine vinegar, a dash of sriracha, and thinned it with veggie stock. It worked out quite well.

I ate three for breakfast this morning.

And as long as I'm typing, I just had the best salad! Mixed lettuce from our CSA box, diced peaches, blueberries, pecans and a maple-dijon vinaigrette. Mmmmmmmm.

Tonight we are having roasted vegetable pizza but spring rolls sound good! I like baked tofu in mine too and a bit of lemongrass paste. I also have a recipe for seitan 'shrimp' that gives them a nice, authentic taste.
