We are on WIC and when we hadn't used up last months cheese before this months vouchers were about to expire, my mom seemed to think that freezing it would be okay. now it is frozen and i dont know how to use it. any ideas?

I freeze cheese all the time. Thaw in the fridge and just use like normal. I do find that it's a bit crumblier than normal if it's been frozen--good if you are shredding it, harder to eat in nice neat slices. But, the taste is fine after being frozen.
Its fine. Just let it defrost enough to slice it or shred it or whatever, and use it. We freeze extra cheese sometimes. Its just the same, at least for regular grocery store blocks of cheese.
We freeze cheese regularly to take advantage of good sale prices. Right now I've got about 10 pounds of it in our garage freezer!
I have found that it is a bit more crumbly when it's thawed, but it's fine. Usually we shred the cheese before freezing it anyways because I almost always use shredded cheese for cooking anyways.
If you let it sit out on the counter for a day or so and get kind of melty before you freeze it, it won't be crumbly when you unthaw it. It's a trick I learned from my mom a long time ago when she used to have lots and lots of extra WIC cheese around.
