Does anyone have a good gluten-free dessert recipe?

My roommate this summer has Celiac Disease, meaning she can't have gluten (flour, wheat, you get the idea). Her birthday's at the end of June and I'd like to make a cake, cupcakes, cheesecake, something to celebrate.

Anyone have any good recipes that either have no flour or can have gluten-free flour substituted (I know they can't just be directly substituted)?

You can substitute rice flour for wheat flour in crusts- you'll get a more crumbly result but it's still quite delicious. Most pie fillings- apple, pumpkin, etc, are already gluten free. Or you can make "pie filling" or cheesecake with no crust at all.

Puddings and gelatin (as long as the pudding is made with cornstarch or potato starch and not with wheat flour) are already gluten free with no substitutions necessary.

It's only cake and cookie recipes that need tweaking for gluten free baking- and even then, there are plenty of prepared mixes available- both "just add eggs oil and water" cake mixes, and "all purpose baking mix" that can be substituted for wheat flour in most recipes with decent results.

The main thing to be careful of is that no traces of gluten accidentally end up in the food from something else in the kitchen. It's safest for her if you don't cook with gluten at all- but I don't know all the details of your situation so I don't know if that's workable for you. What we do in my kitchen (I can't have gluten but my kids can) is that I won't bake or cook with anything gluten, but I do buy breads and hot dog/burger buns that can be eaten with no preparation, and we have a toaster oven that's used for gluten things only. If I wanted to eat a lot of toasted GF breads (which I don't becaues I'm also on a low carb diet) I'd buy a 2nd toaster.

They have lots of good recipes there. To tell you the truth I have made a few goodies but they all seem to have an after taste. I do however have an amazing Choc chip cookies recipe that is GF,EF,and DF if you are interested.
The best GF sweets I have had is Pamelas choc cake. Simple to make and no aftertaste. It is available is most stores.

I just made some GF oatmeal chocolate chip cookies. They were unbelievably yummy. : (You just have to make sure the oats are certified GF - Bob's Red Mill sells them...)

1 C. sorghum flour
1 C. rice flour
1 C. GF oats
1/2 C. chocolate chips (or more if you like )
1/2 C. shortening or butter
1/2 C. cane sugar
2 eggs
1 tsp baking soda
1/2 tsp sea salt
1 tsp vanilla extract

* Cream shortening/butter & sugar
* Add eggs
* Add vanilla extract
* In a separate bowl mix flours, oats, baking soda, sea salt, chocolate chips
* Slowly add dry mixture to wet mixture, while stirring
* drop by spoonful onto greased cookie tin
* bake at 350*F for 10-14 minutes, until edges are browned basically
* Yields roughly 2 dozen

different fresh fruits and whipped cream or ice cream layered in a pretty dish.
peaches, raspberries, and vanilla ice cream
strawberries, strawberry ice cream, whipped cream
pears, mint ice cream

do a recipe search for flourless brownie. Martha stewart has one I think on her website... as I can't find mine right this second. I make one with added coconut, roasted almonds and a dash of chili pepper. Its delish!

or if you have a trader joes grocery store - they have a fabulous gluten free brownie mix. It honestly tastes like "normal"

I made this most scrumptious flourless chocolate cake for my daughter's first birthday. I just topped it with sliced strawberries for her. For the adults I crumbled it up and then layered it with whipped cream and strawberries. I got the recipe off of allrecipes dot com. Everyone raved about it and wouldn't have guessed it was flourless.
