I have a ton of ground beef, and I am totally out of ways to fix it (or at least, ways that don't make me feel queasy ) So...please post your favorite things to do with ground beef! Or better yet, everything you can think of do with it!

Brown it and use it in soup! No, really.
My mom used to make "hamburger soup" all the time when I was growing up. It was like a quick vegetable beef soup.

Brown the ground beef, toss it in some bone broth with some carrots, potatoes (if you eat them), a can of tomatoes, some fresh or frozen green beans, a little oregano and a bay leaf. Simmer until the veggies are done.

we do a lot of meatballs. husband and son both love them.

i have a lot of ground beef this month and ive been having trouble with recipes, too.

tonight we are having salisbury steak. i looked for a recipe online but couldnt find one that didnt call for either canned or dehydrated onion soup (who eats that stuff!?!) so i made one up with bread crumbs and lots of finely chopped onion and a tiny bit of garlic and salt and pepper. im going to make a mushroom gravy with the pan drippings and some homemade chicken stock and serve it with mashed potato and broccoli and carrots.:

Shepherd's Pie. Rachael Ray has a good, quick recipe for it.

I've recently started adding an egg to my hamburger mix, and I am in love with hamburgers now. I also add diced onions, 1-2 tsp salt, and pepper to taste. I always did that stuff, but the egg added in there, yumm. Makes it so moist and yummy.

I like easy stroganoff. I mix browned ground beef with cooked mushrooms and sour cream, add a little milk if needed to make sauce, salt and pepper to taste, serve over brown rice. Yummy!

i make a lot of the suggestions already. we also like "soup burgers".

simply add a can of chunky vegetable soup to browned ground beef in a skillet. add salt and pepper to taste, a teaspoon of mustard, and 1/2 cup of ketchup. they are like gourment sloppy joes. they're a super cheap & quick fix! we love um!

i looked at my menu list & found a few more.

*beef lasagna
*spaghetti pie
*ground beef/cut up potatoes/diced tomatoes casserole topped with cheese - add salt and pepper to taste (sounds lame but it's good - my grandma makes it a lot)
*stuffed green peppers (mix cooked rice, ground beef, and pasta sauce together - then stuff it in green peppers and bake on 350 for about 30-45 min). we had this monday - it's awesome and you can freeze the leftover mix to make another night.
*beef chili
*beef and cabbage pitas
*spicy beef quesidillas
*cheeseburger pockets (use uncooked crescent rools and fill with cooked hamburger and cheese - then seal up and bake). my kids love this treat.

we eat a lot of ground beef. burgers, of course, with homemade buns and lots of raw greens on top. recently the kids have been eating a lot of tacos, too- i make the sour cream. cabbage rolls are great, but really more of a fall/ winter thing for me. meatballs are good in the summer with whole bunches of basil processed finely and used part for part with meat plus a few eggs, some spices and so on.

Mmm, this sounds yummy! I'm not a fan of mushrooms, but I keep trying to be! Anything tastes good with sour cream. And yum, brown rice instead of noodles...

I'm allergic to wheat AND tomatoes, so most of the ground beef recipes are no-nos for me.

I make a "Cottage Pie" (it's only called shepherd's pie if lamb is used) with ground beef, mashed potatoes, finely chopped carrots, celery, garlic & onions & spices.

I saute the veggies, add salt, pepper, thyme, rosemary & nutmeg to taste, brown the ground beef & put in a pie dish. In a separate pot, I've made mashed potatoes. I smooth the mashed potatoes over the ground beef mixture, top with a few pats of butter & bake it until the potatoes are starting to turn golden brown.

We LOVE this served with sauerkraut!

This dinner is super fast & easy:

I take 2 lbs of ground beef, add it to some sauteed onions & garlic, salt to taste. Pour in a jar of salsa.
I buy Bearitos blue corn taco shells, warm them in the oven & serve with sour cream, avocadoes, lettuce, etc.
Since I can't have tomatoes, I make myself a pound of ground beef with fresh lime juice with chopped fresh cilantro & jalapenos.

And then the good ole burgers"

I sneak chopped chard or kale or spinach into mine along with some garlic & onion & melt some raw cheddar over top.

Great Ideas so far!

I just wanted to offer one really quick idea that always made a great last minute meal for us. We would add curry powder and salt to the meat while it was cooking, and add some peas right at the end of the cooking time. We would serve this over brown rice, and it's really quite tasty. :-) You can also add some fresh garlic as well.

I've been eating it with feta and greek seasoning in pita for gyros instead of lamb. I too, have way too much ground to use up!

Well, I should say make, not eat. I'm still preparing it for DH and kids but I'm not eating it now.

Another thing that's good to do is make kabobs. I always put meat and everything in food processor to make more of a paste, and then tightly wrap around skewers and chill, then grill.

I last used ground beef to make shepard's pie, only I used mashed cauliflower instead of mashed potatoes for the top. It's also good in meatloaf, meatballs (in gravy or in tomato sauce) and burgers. Oh, also tacos.

Greek lasagna (or Italian, I prefer Greek!)

I haven't made it in awhile (because my kids wont eat it) but I usedto make this spanish casserole thing. You cook the ground beef, add salsa, taco sauce, RedHot or sriracha sauce (depends on how much hot you like) fresh chopped onions and green peppers. Cook about 2 cups of rice and when that is done, add it to the meat/salsa mix and stir it up. Add grated cheese on top if you wish, and voila-dinner.

Dirty rice

Brown burger with onions and garlic
Have some rice going in a seperate pan
salt and pepper to taste
chop up a green pepper and some celery add to the hot pan.
add about 1 TBS of cumin
I add liver sausage (it is hard to find here) You don't really need it but it is good.

mix with rice and serve. I like some fresh tomatoes with it. Or you can stuff green peppers. You could stuff grape leaves with this too.

no one mentioned enchiladas!

Or super nachos w/ ground beef on top.

Also macaroni and chees w/ some beef mixed in, maybe add some diced tomatos too.

I think most things I make with it have already been covered.
