2 weeks to FRESH MILK! help!

our cow is about to freshen in just a couple of weeks! it's been almost a year since she was in milk and i'm overwhelmed with trying to think of what to do with all that milk. i remember some things. i was just wanting some inspiration for creativity.

any ideas?

Oh, I'm not the best for this. But I do love the soft farmer's cheese. Do you know how to make that? Isn't that a good way to use lots of milk?

I love farmer's cheese combined with herbs...yummy.

Oooh, but if I had more milk than I needed I'd make butter, raw butter, oh yes. I want me some raw butter. We don't have a good source here.

we have one in milk now and one about to freshen any minute, too! for now i have 2 gallons a day, here is how i use it:
  • butter twice a week. we do not buy oil right now.
  • sour cream (i get my cultures from dairyconnection.com and love them)
  • moz once a week, 3 gallons or so
  • buttermilk on hand always for baking
  • yogurt, 1 gallon & a half each week, in 1/2 gallon intervals
  • drinking milk, we drink at least 1/2 gallon/ day
  • whipped cream on everything
  • cream in coffee- dh & i consume more than a pint a day.
  • tapioca pudding a lot, but my youngest cannot have it.
  • hard cheese, but not so much because i am big, pregnant and gardening is so intense right now i dont have a lot of time
  • we are raising 100 meat chickens this year, so whey, sour milk, etc goes for them. we soak their feed.
  • when the chickens are done for the season we will raise fall pigs.
  • we also have one mama cat, 3 kittens and two pyrenees pups that help me out with this problem
