making palatable dandelion greens

So I just tried dandelion greens for the first time tonight. We just joined a CSA and it's in season so we'll be getting it every week for awhile. I read it's less bitter sauteed than raw...so I sauteed carrots and onions in butter until they were carmelized and sweet, sauteed the dandelion greens and topped with balsamic vinegar. Sounded delicious but I just couldn't do the bitterness of the greens.

I know they are good for me and I'm stuck with getting them every week.. so someone please give me hope that you have a delicious way of preparing them?

bacon.
Seriously, it is really good cooked in lard with bacon bits.

Boil or blanch, then sauté.

I second the bacon thing. Salt will counteract bitterness on your tongue.

I can't say anything about dandelion greens, but I do this with broccoli rabe and it really does help removing a lot of the bitterness.

I LOVE dandelion greens. I saute lots of onions and garlic and then add the chopped greens and saute...Add more butter and a little sea salt. :

I've blanched them and then "sauteed" them with lots of butter and soy sauce to taste. The greens were still fairly astringent, but in a pleasant way, to my mind.

Cook them in milk.

Or put them in a quiche of frittata. The dairy and eggs kill the bitterness.

Mmm with bacon, I like that. And in a frittata with creme fraiche and cheese, since I'm on a frittata kick anyways. I'll give those a try. I didn't get them in my CSA box this week anyways though so we'll see.

nutritional yeast

saute with olive oil or butter and add a little tamari or salt and nutritional yeast. my kids and i LOOOOOVE them this way, and nutritional yeast has such a creamy flavor. good luck!
