How do I convert my milk grains to water kefir grains?

Can I use my milk grains to culture coconut milk?

I don't know that you can convert dairy grains to water grains, but you can convert them to juice grains. Just wash them well in nonclorinated water and pop them in a bottle of juice with the cap loose. It takes us about 48 hours of fermenting to get it where DH likes it. He won't consume dairy kefir, yoghurt, or fermented veggies, but loves grape or peach juice kefir. I get the organic Santa Cruz juices. Once converted to juice, the grains will not multiply and can't be switched back to dairy. The grains will take on the color of the darkest juice you use and can be reused for months in my experience.

Wow! I wonder if this could make juice a healthier choice for kids! Does it reuce the fructose content?

The kefir grains do digest some of the fructose. How much depends on how long you allow it to ferment. Eventually it will turn to sour like vinegar if you left it for quite a while. Dr. Tom Cowan MD (TF doc who writes for Nourishing Traditions journal) states on his site that juice kefir is the only way juice should be consumed

You could also freeze kefir juice into pops.
