raw slamon salad (from NT)??

Has anyone made this? Do I need sushi-grade salmon? My Whole Foods Market has wild-caught Alaskan Coho salmon...since it'll be marinated in an acid (lime and whey) is that high enough quality?

No you don't need suchi grade salmon, the wild-caught Alaskan would be just fine. Enjoy!

I don't know the recipe offhand, but I've done gravlax with lime and salt; I think the high acidity and osmotic pressure of the very high saline condition would kill parasites just fine.

I wouldn't use whey, though, that would make it taste... icky. But I think that of all whey based ferments too.
