I really want to lose weight, but I don't have the energy to think about each meal, so I eat junk. I'm looking for recipes that have about 1800 calories or so for the entire batch (probably a soup or a casserole), so I can make it and just eat it throughout the day. This probably sounds weird to some people, but I'm stressed from a lot of things, being overweight included, and the stress it making me have NO energy for this, which in turn makes me more stressed. LOL

I need recipes that have no meat or dairy products, and that have as many of my daily requirements as possible (especially calcium, protein, iron).
