ok.. celery flakes too. it's been a while.
3 cups whole wheat flour (red or white)-optional-may use all wheat instead of below or no wheat and increase others
1 cup barley flour
1 cup corn flour
1 cup teff flour
2 ripe roma tomatoes, quartered
2 large stalks celery, cut in pieces
2-3 tsp celtic sea salt
1 tsp dill weed
1 tsp onion powder
½ tsp celery flakes
2/3 C walnut or olive oil
Salt in shaker
Preheat oven to 350f. Combine flour, salt and spices in large mixing bowl, set aside. Combine tomatoes and celery in blender, blend well. Drain through small-gauge kitchen sieve, keeping juice. Add juice to flour/oil mixture and combine just until mixed—do not overmix or it will be tough. Roll out very thin on large pizza pan (covered with foil), use pizza roller to score into squares. Sprinkle top with salt. Bake for 20-30 minutes until just golden brown and hollow sounding to fork. Allow to cool FULLY before breaking squares apart for eating and storing.
for regular (plain) crackers I just use the same salt and add water instead of the veggies.
