I have an Aloe plant that is bigger than my 23 month old toddler. I've never cut a single stalk. I would love to use it for boo-boos and burns but have no idea how to cut it (where, how big, yadda yadda). Also, does anyone know how to make gel out of the plant?

You cut off as much as you need. Just take a sharp knife and cut off an inch or two from one of the stalks. Then slit it up the side and open it up. You will see the gel. We just rub the open piece on the injury.
If you are looking to harvest the entire plant, i'm not sure how you'd go about it. I would think you'd need to use an additive to keep it fresh, so your best bet would be to cut and use it on an as-needed basis.
