JULY Meal Plans!

What is everyone planning this week/month in July? (btw I can't believe it is July already!)

Monday 30 - Squash Casserole, Baked Chicken Legs, Leftover Limas/Corn
Tuesday 1 - Seafood Platters (special occassion - we have company this week)
Wednesday 2 - Leftovers, make Peach Cobbler
Thursday 3 - Ribs, Potato Salad, Baked Beans, Mac N Cheese (DH is off this day instead of the 4th)
Friday 4 - Leftovers, make 4th of July Flag Cake
Saturday 5 - Greek Feta Shrimp, Salad
Sunday 6 - Cashew Chicken & Broccoli over Rice (still haven't had this yet even though it was on the menu last week)

Lunches: Egg Salad or Cobb Sandwiches, 1 day is out at Mexican
Breakfasts: Eggs/Toast/Fruit, French Toast/Fruit, or Oatmeal/Fruit

Well for the last few weeks I have had no plan and was kinda trying to cook on the fly. UGH....I'm back on the meal plan wagon.

So here it is:

Tonight-Chipotle blackberry BBQ ribs in the Crock pot w/ beans and pasta salad

Tues: Burgers and potato salad

Wed: Grilled chicken caeser salad w/ garlic bread

Thurs: Pork tacos(if there's enough left from tonight) black bean and corn salad

Fri: Pizza? It is 4th of July maybe not

Sat: Cook's choice(probably BBQ)

So I'm back on the wagon, since it's been hot it's so much harder for me to plan, and being really busy the last few weeks has made it really hard, but I'm back at it.

1 - roast with potatoes, carrots, onions & green beans, rolls
2 - spaghetti, leftover roast veggies, salad, rolls
3 - leftovers
4 - out
5 - lemon pepper chicken, steamed squash, salad, rolls
6 - lemon pepper chicken salads, baked potatoes
7 - scrambled eggs, link sausage, toast
8 - Mexican beef & bean casserole, tortilla chips with guacamole
9 - leftovers
10 - baked tilapia, lima beans, corn on the cob, crescent rolls
11 - out
12 - lasagna, Italian green beans, salad, rolls
13 - leftovers
14 - black bean soup, tortilla chips with salsa
15 - leftovers
16 - teriyaki chicken, rice, green beans, rolls
17 - grilled salmon, baked potatoes, grilled corn on the cob, crescent rolls
18 - out
19 - steak fajitas, tortilla chips with pico de gallo
20 - grilled burgers, chips, watermelon
21 - leftovers
22 - fried eggs, bacon, biscuits
23 - "drunk" chicken, mac & cheese, lima beans, rolls
24 - leftovers
25 - out
26 - beef stroganoff, crowder peas, steamed carrots, rolls
27 - chicken soft tacos with Ranchero sauce, Mexican rice
28 - leftovers
29 - frozen pizza, corn
30 - loaded baked potatoes, salad
31 - French toast, bacon, strawberries

I feel so overwhelmed by the previous post!!! I have tried before to do more than a week in advance and I just can't! So here's this week:

1. Pierogies, squash/zuchinni, beets, salad
2. Lasagna, veggies, salad, garlic bread
3. leftovers
4. It's my birthday so???
5. Family potluck
6. BBQ chicken on the grill, veggies, salad

Then it's off to make the menu for the next week. I did fall off the wagon for a week or two, but I'm back on for good now.

How did July get here so fast? Here's our week: (I'm hoping to start doing two weeks at a time and build up to a month, but I'll start slowly )

Tuesday - Roasted Chicken, salad
Wednesday - Tuna Casserole
Thursday - Chicken Salad sandwiches for Dp and I, and PB & Js for the boys, chips and other ingredients for our fireworks picnic
Friday - Pizza night
Saturday - Pasta, garlic bread, salad
Sunday - Meatloaf, mashed potatoes, green beans
Monday - Spaghetti Pie (From leftover pasta on Saturday)

Here is our plan for the week.....


1. Skillet macaroni and ground beef, corn, texas toast
2. Green chile chicken enchiladas, rice, black beans,
3. Order pizza ?? , salad, cheesecake
4. BBQ ribs, red-skinned potato salad, mac and cheese, field peas, baked beans,
5. Leftovers
6. Grilled chipotle chicken and avocado wraps, pasta salad, fresh fruit
7. Grilled steak , mashed potatoes, steamed sugar snap peas, salad

July 1- Subway (we had to get a tire replaced and it was getting late)
July 2- Country Chicken Cassarole
July 3- Skillet Mac and Beef
July 4- Grilling- sausages and hambergers- we splurged and got corn on the cob for the veggie along with salads.
July 5- Baked Ziti
July 6- Cheddar Broccoli Chicken
July 7- Breakfest for Dinner- Pancakes, bacon, eggs etc. Whatever DH wants
July 8- Tuna Noodle Cassarole
July 9- Tatertot Cassarole
July 10- Beef taco bake
July 11- Homemade Gnocchi and Chicken
July 12- Beefy Cornbread
July 13- Lasagna
July 14- Tuna and Pasta Cheddar melt
July 15- Shrimp Stir fry
July 16- Brothy Shrimp Scampi..

Veggies: fresh salad, broccoli, corn, carrots or green beans. Maybe some spinach since DD loves it.
Breakfest: cereal, fruit, oatmeal, scrambled eggs
Lunch: Tuna salad sandwich, chicken salad sandwich, ham and cheese sandwich, peanut butter and Jelly (my daughter new fav), leftovers, chicken noodle soup, or salad
We will probably not eat everything in the exact order it is on here but it will stick to the same meals. I just never know what I really want so I pick it out the morning before. Best thing is I have 99% of it in my cupboards so I don't have to go shopping for more than the parishables that I can store a bulk of.

When I use ground beef Ill add onions but lately Ive been using spicy Kielbasa and its really yummy. Basically add a can of Cream of Mushroom, soup can of water and meat to a cassarole dish. Top with Tatertots. Cook in the oven at 350 for around 30 minutes. Add cheese and cook for 5-10 minutes. It freezes pretty well, I usually make two freeze one and eat one. If you want to add some veggies Ive added cut up broccoli and peas and everyone loved it.

Just made up my list for the week:

baking- gluten-free banana-blueberry muffins

Breakfasts-combinations of home-made grain-less granola w/goat milk, smoothies, leftover muffins, eggs. Waffles on Sunday, possibly w/bacon

Lunches: leftovers (especially soup as that will be a big batch), veggie sushi, salmon salad on rice crackers, egg salad sandwiches (nut butter for those allergic to eggs), salads

Dinners:
1) chicken fried rice
2) BBQ tofu, braised greens
3) kale and potatoes, Italian sausages
4) baked mac 'n cheese w/ broccoli (fresh from our garden!
5) crock pot BBQ ribs, coleslaw made w/ asain cabbage and other grated veggies from our farm
6) chicken noddle soup w/ lots of veggies
7) cob salad

Baked Lentils & Cheese with Peppers (vegetarian)
Green Chili & Pinto Beans (pork)
Enchiladas (pork)
Chilliquillas (vegetarian, unless theres STILL chili, which is highly unlikely
Pad Thai (vegetarian)
Venison
Akoori (eggs)
Stuffed Zucchini (we should have some big enough by then. I hope! vegetarian)
Northern Pike (fish)
Homemade Pizza
Spaghetti Squash with Spaghetti Sauce

Thats as far as I have so far... we'll see how it goes

Sunday---Chicken piccata, orzo with carmelized squash & green salad
Monday---Green salad, Baked Cod with seafood stuffing
Tuesday-- Easy Asian noodles
Wednesday--Leftovers
Thursday--Penne pasta w/chicken tenderloins, green salad
Friday--Pepperoni pizza(kids), Fajita pizza (DH & I)
Saturday--Out
Sunday--Pecan encrusted salmon, couscous & green salad

I pre-make my salad on Sat/Sunday (after I pick up at the CSA) & put it into a glass bowl-- all argula, swiss chard, romaine, kale, parsley, garlic, ginger, cilantro etc. is cut up quite fine & then mixed together. All veggies are cut up & put into little containers to add to the salad each night. This way we always have the ability to have a salad with dinner but I don't have to make it each night.

ETA Adding the veggies to the green salad mix causes it to spoil rather quickly (a few days) whereas keeping them separated lets the green salad keep for a week. :

Pork piccata with lemon orzo and spinach

Pineapple glazed salmon with gingered sugar snap peas with roasted garlic and new potatoes

chili dogs and potato salad + sliced tomatoes

sloppy joes with tater tots

Cream cheese chicken with red bell pepper and mashed potatoes

Slow cooked collard greens with ham hock and corn bread



for lunches I have roasted turkey and Gloucester cheese, apple sauce/fruit.

-Tonight: sour cream veggie enchiladas, spinach salad
-Vegetable stew over soft polenta (Veg. times)
-Buffalo chicken pasta (with fake chicken), sugar snap peas, zucchini
-Mac and cheese
-Chik patties, potato salad, watermelon
-Black bean tacos
