Recipe of the Week: Week 2: Quick Fix Chicken Au Gratin

Made this the other night, my 2 year old (my official taste tester :P ) LOVED it and so did my husband and me Not to mention it was super easy to make and relatively cheap.

4 Large Chicken Breast halves skinned and fat trimmed off (I used the boneless skinless chicken strips instead)
2 Tablespoons fresh lemon juice ( I used bottled)
1 Tablespoon Flour
4 Tablespoons Dijon Mustard
1/2 tsp Worcestershire sauce or steak sauce
1 Garlic Clove, finely minced
1 tablespoon mayonnaise
1/2 cup whole wheat bread crumbs.

-Place Chicken in baking dish
-Brush with lemon juice
-Combine 2 tablespoons of the mustard, the Worcestershire sauce or steak sauce, and garlic. Spread evenly over chicken.
-Cover with foil and refrigerate for 1 hour or more.
-Preheat over to 350.
-Bake, covered, for 25 minutes (I did for 15 since I used tenders).
-Combine remaining mustard, mayonnaise and spread over chicken. Coat each piece with breadcrumbs.
-Bake uncovered until lightly browned, about 10 minutes ( or 5 if you are using tenders).

1 protein serving depending on the size of the breast or how many tenders you eat.

From the book "What to eat when you're expecting" by Eisenburg, Murkoff, and Hathaway.

I served ours with sliced cucumbers marinated with Organic Zesty Italian dressing and some white vinegar.

I made this the other night, it was fantastic I served it with roasted red bliss potatoes tossed with olive oil and rosemary and a salad with homemade oil/vinegar based dressing. There was enough left over for me to have for lunch the next day, I ate it cold with potato salad w/green beans!

To the OP, you don't mention where/when to use the flour!

Wait until you see the recipe for next week It's AMAZING!!!!! It's a type of mac and cheese.

We made the pizza last night, I have to say, it was one of the BEST crusts I've ever had, was easy to manage, super healthy. I drooled.

Ok, I know I said this weekend, but I pulled out the chicken for tonight! I'm already excited to eat and I haven't even started cooking yet! :

oh, and ETA that I LOVE mac and cheese so I'll be anxiously awaiting next weeks recipe.

ROFL!!!! It is very very yummy I think it would be awesome without the bread crumbs and cooked on the grill as well!!

That looks really good. Hopefully chicken will be on a good special again soon, it's outrageously priced here.

Really? It's super cheap here. Next week's recipe is relatively cheap Just pick up some canned chicken or turkey (or even use fresh if it's marked down!!!) for the mac and cheese.

Yeah, it's about $16 for 7 breasts. I can buy steak cheaper.

oooh don't buy breasts!!!! What I do to cut the cost down is that I buy the skinless boneless tenders. They are about 5.70 for a HUGE pack of them. The only difference, they are strips instead of breasts. Plus they are easier to cut up for kids, and easier to store. I also like them because I use them in a salad quicker the next day

Ok, I'm eating this as we speak and it's delish! I made a few small changes and added some honey to the top of the breast as well. I also added some parm cheese to the breadcrumbs. Thanks for the yummy recipe!
